There’s something about autumn that makes you want to start tucking things away for winter. Just like the animals collecting what they’ll need for the colder months, we’ve been filling our baskets beneath the apple trees.
A basket here, a few more there, and somehow we always seem to end up with more apples than we know what to do with.
We’ll keep a good many for the kitchen, pass a few along to neighbours, and leave some of the softer ones for wildlife to enjoy.

It’s certainly bound to become the apple of your eye!
Ingredients
555g apples
1 egg
224g sugar
113g butter, melted
60g milk
6g vanilla
94g flour
72g almond flour
10g baking powder
1 tsp Cardamom
1/2 tsp salt
2 egg yolks
1/2 cup sliced almonds
Powdered sugar, for finishing
Directions
1. Set the oven to 350F and grease a 9 inch spring form pan
2. Peel and slice the apples and set aside
3. In another bowl beat the egg and 24g. until pale. Stir in butter, vanilla, and milk.
4. In another bowl whisk together flours, baking powder, salt, cardamom, and 200g sugar. Gradually add this mixture into the egg mixture.
5. In a separate bowl whisk together 1 cup batter and the 2 egg yolks. Then stir in apples. You will have two bowls of batter
6. Pour the apple batter into the spring form pan, top the other batter and then sprinkle with the sliced almonds.
7. Bake for about 45 minutes or until a knife comes out clean.
8. Once cooled, finish with a light dusting of powdered sugar.
