Enjoy this simple Shirazi salad.
This Persian Shirazi salad is a traditional salad that comes from Shiraz; a city in the South West of Iran.
It's an incredibly simple summer dish with vibrant colours, and flavours. It pairs perfectly with any meal but since its barbecue season, our suggestion is to pair it alongside grilled meats such as, chicken, lamb, or beef. The acidity of the lemon helps to cut through the richness of the meat. The other main ingredients are, cucumber, red onion, tomato, and the fresh herb that gives this salad its unique and refreshing taste - mint!
Ingredients
(Servings 6)
- 2 English cucumbers
- 6 medium Roma tomatoes
- 1 small red onion
- 1 large lemon
- 2 Tablespoons chopped fresh mint
- ¼ cup parsley
- 3 Tablespoons olive oil
- Salt and pepper to taste
Directions
- Finely chop your vegetables and add to a large serving bowl.
- Finely chop mint and set aside in a small bowl.
- Squeeze the lemon. Then combine lemon juice, olive oil, salt, pepper, parsley, and chopped fresh mint in a small bowl.
- In your serving bowl, combine your vegetables, and lemon juice mixture over top. Mix together well.
- Set aside for 20-30 mins in the fridge before serving to allow the flavours of the dressing to infuse with the vegetables.
- Serve and enjoy!

Very nice. Similar to a Greek salad which I have been making for years now. With the addition of olives, of course and Feta cheese bits; it makes a substantial meal.
